Pete’s Preserved Lemons

Pete and her mum have been busy in the kitchen turning a glut of lemons into delicious homemade goodness. Here’s their recipe for Preserved Lemons.


Ingredients

  • 6 - 8 large lemons washed, each cut into 6 wedges

  • 1 cup of salt

  • 1 cinnamon stick

  • 10 peppercorns

  • 2 fresh bay leaves

  • 4 cardamom pods

Method

  1. Sterilise jars in the microwave after washing them. Leave them wet when sterilising….45 seconds.

  2. Place lemon wedges and salt in a large bowl. Massage salt into lemons, squeezing the juice out of the lemons.

  3. Arrange lemons in cooled jars with the cardamom pods, fresh bay leaves, cinnamon sticks and peppercorns.

  4. Top up jars with extra lemon juice if necessary.

  5. Seal jars. Leave them in a cool dark place and turn them once a week.

Preserved lemons go well with:

  • casseroles

  • dressings

  • salads

  • middle eastern foods (so good!)

  • cheese

  • fish curry

  • salsas
