Middle Eastern Orange Cakes

This is one of my all time favourite recipes. Super easy to make (although it does require some time with boiling the oranges - 2 hours to be exact), gluten free, ridiculously moist, freezes brilliantly so you can make ahead of time, and just utterly delicious. I have found that cooking times depend a lot on your oven and the juice content of your oranges, so my suggestion is to start with the minimum time and keep checking with a skewer until you know what works for you.


Ingredients

  • 2 large oranges

  • 6 eggs

  • 250g ground almond meal

  • 250g caster sugar

  • 1 teaspoon baking powder

  • Dark chocolate


Method

  1. Place washed oranges in a saucepan with about an inch of water. Boil for two hours, topping up with water periodically. Allow to cool.

  2. Roughly chopped oranges and remove seeds. Place all ingredients (except chocolate) in a food processor and blend until just combined. I like mine to have a few flecks of orange peel but you might prefer to have it completely smooth.

  3. Pour mixture into lined patty pans. Bake in 160 degree oven for 30 to 40 minutes.

  4. Allow to cool. Dip the top side of the cake into melted dark chocolate and serve upside down with a few slices of segmented oranges.

  5. Alternative. Bake as one whole cake for approximately 1.5 hours.

  6. Also goes well with pistachios and a dollop of Greek yoghurt.
