There’s nothing quite like homegrown pumpkin to accompany a delicious slow cooked roast. Not just for Sundays. The following recipe also works well as a starter.
Ingredients
Half a pumpkin peeled and sliced into 2cm strips
Handful of fresh sage from the garden
4 cloves of garlic, sliced thinly
Olive oil
Salt and pepper
Method
Preheat oven to 190 degrees Celsius.
Pour a generous amount of olive oil into a baking dish and place in preheated oven for about 5 minutes or until oil is hot.
Toss sliced pumpkin, garlic, sage, salt and pepper together then carefully place all ingredients into the baking dish with the hot oil. Turn the pumpkin so that the oil coats both sides of the pumpkin.
Bake for 20-30 minutes.
Serve hot with homemade tomato relish or as an accompaniment to your favourite roast.
